This year, our country is on Enhanced Community Quarantine when Dad celebrated his 66th birthday. Since there's now way we're going out to celebrate, we decided to just take out our indoor grill for a Korean themed dinner at home!
A day before dad's birthday, Ate went out for the grocery run. It was Easter, but she went out as early as possible (around 7:30am) to beat the long lines in our nearest grocery. Talk about not wasting time, Ate said she heard mass online while waiting in line! After the usual grocery, Ate also dropped by a Korean mart to get kimchi and other stuff that are sold out.
That night, my family dressed up as if we're heading out. At the last minute, I decided to cook cheesy kimchi rice. We were busy taking turns in the kitchen, and by past 7pm, we settled in our dining area to celebrate another year in my dad's life.

Ate is the main girl in the kitchen, mom's helper when it comes to our daily menu especially the past weeks that we're all on home quarantine. Even 90% of this Korean party is her idea.
She prepared some of the Korean side dishes like the cucumber kimchi and the japchae (glass noodles), and then pre-cooked the samgyupsal 30 minutes before dinnertime so the guests will just have to seat, eat, and enjoy.
Meanwhile, here's my impromptu kimchi rice contribution! Basically, if you have kimchi and cooked rice--you can easily make this at home too!
But for me to add more flavor to your kimchi rice, you can also toss in garlic, sesame oil, sesame seeds, nori strips, grated cheese, and top the whole thing with sunny side up!
The bottles of soju I bought from before was put into use.

• Electric Grill for the Meat
• Samgyupsal, Beef, Pork, Etc.
• Lots of Kimchi
• Lots of Lettuce
• Garlic
• Sesame Oil & Seeds
• Gochujang (Korean sauce)
• Nori Sheets
• Egg
• Soju + Yakult
• Cheese / Melted Cheese
• Noodles: Spicy Ramyeun, tteokbokki, or Japchae
• Other Veggie Side Dish: Like corn, cucumber, radish, bean sprouts
• Dessert: Banana Milk or Korean ice cream

We had a feast! And the most important part is that the birthday celebrant enjoyed! The next day, dad said he still has the birthday hangover, haha!
Every year, we always eat out to celebrate dad's birthday and try a new restaurant. This year may seem different, but it honestly feels the same for me. I guess it's true that as you grow older, you won't need much to call it a good birthday. To be blessed with another year, enjoy a life with the best of health, and to share it with the people you love are the essences of a happy happy birthday. ❤
